The Team
Under the direction of Chef Gonzalo Pineiro, our brigade brings together specialized chefs – pastry, roasting, garde-manger – along with a bilingual service team. Their expertise and attention to detail ensure a smooth and elegant service, true to the spirit of the house.
Fresh & Local Products
We source our charcuterie and cheeses from Burgundy artisans: persillé ham, aged Comté, and farmhouse Morbier are among our staples.
All garnishes, dips, and condiments are prepared in-house each morning to guarantee freshness and quality.
